Introduction

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice

  • 1 tsp paprika
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the tops off bell peppers and remove seeds and membranes. Boil peppers for 5 minutes, then drain and set aside.
  3. In a large skillet, brown ground beef over medium heat until fully cooked. Drain excess fat.
  4. Add diced onion and garlic to the skillet. Cook for 3-4 minutes until softened.
  5. Stir in diced tomatoes, tomato paste, oregano, paprika, salt, and pepper. Simmer for 5 minutes.
  6. Remove from heat and mix in cooked rice and half of the mozzarella cheese.
  7. Stuff each pepper with the beef and rice mixture. Place upright in a baking dish.
  8. Sprinkle remaining cheese on top of each pepper.
  9. Bake for 25-30 minutes until peppers are tender and cheese is golden brown.
